Fantastic thread theme Jeff.

FILM
Jin-Roh - Strictly one of the best animations I've seen. Movements are fluid, the gunfights are intense and the plot doesn't pull punches.

MSG Trilogy - One of the few series-to-film adaptations that actually improves on the original. "Ai Senshi" is a masterpiece.

SERIES
Macross 7 - Rock music and mecha, my two favorite things in life. Koyasu voice acting too.

G Gundam - Wuxia and mecha, my two favorite things in life (lol). I thought the plot handled the themes of environmentalism better than most anime, and the scene composition had that certain flair that only Imagawa can bring to the table.

Betterman - Rich world, characters, story. The ending sucks but I love everything else about it. I'd never seen an anime take full advantage of the unique camera placement and lighting the medium has to offer, until I saw this.

Birdy The Mighty: Decode - Pleasant to look at, funny sometimes, painful at others. The antics could have gone full out lowbrow but the show stayed relatively serious, and the friendship between the two mains only sweetened with time.

OVA
Giant Robo - This is it for me. Nothing beats a boy and his robot, and to stack Imagawa direction, the Amano soundtrack and essentially a lifetime of characters from Mitsuteru Yokoyama's bibliography on top of that? Just the best.

Patlabor - A pleasant comedy, good animation, cute characters. And cops on the run is always a delight.

MANGA
MARS - One of Yokoyama's finest works. The story hits fast and hard in five volumes, and the ending is a kick in the head.

The Path of Ryu - People talk about Kamen Rider or Cyborg 009 when it comes to Ishinomori, but that's only cuz they haven't read Ryu no Michi. If there was ever SCI FI, it's this: spaceships, giant bugs, ape men, cyborgs, gigantic cities, mutants, alternate dimensions and space gods. And to top it all off, this guy set the bar for two page spreads -in 1969!- that IMO no one's been able to since surpass.

The Ghost and the Lady - Just a nice, two volume story about Florence Nightingale and a Ghost. I really dig the artwork and the depiction of Florence does the real-life lady justice.

I think that's about it for mine (unless I think of something else lol). Now for some others.

Grave of the Fireflies - The best anti-war movie ever made. Full stop. f***ing destroys me every time I watch it.
Yes, love that film. The ending hurts.

Cowboy Bebop - Perhaps the best nearly fully episodic anime ever made. Exceptionally likable flawed characters, an old west in space feel, and wonderful fight choreography. Fantastic music, just amazing.

Turn A Gundam
Tomino's masterpiece. Syd's mecha design is inspired and the whole setting/plot feel like an amazing story out of another era. And years later there's still a ton of discussion to be had about that beautiful ending.
