It's supposed to be a puzzle of creating the right conditions for ambushes, but turns out it's easier and simpler to just chase them around and hope you catch them unawares. The anti-ghost umbrella is excellent for blocking ghost projectile attacks; all you need to do is hold the button to keep blocking them. And yes, the running slash is absurdly slow.
