Solomon Grundy
He's really more of a humor pick. Grundy is more funny that he doesn't pilot well. When he does do well, it's funny the first time, but really not after that. He's too much of a bulldozer to be a good choice as a pilot for a fast surgical fighter.

Captain Britain
Here's a guy with some good potential. Great leadership ability, great intellect, and his abilities to boot. Also, being an English superhero just dropped into a Star Wars setting would be a great slice of specific personality in a fish-out-of-water scenario. However, his powers make him just a little awkward in terms of being in the fighter as opposed to out of it.

Dr. Robotnik
What made Robotnik decide to join the Rebel alliance? Why is he leading an A-wing squadron? I guess he has the piloting ability and engineering prowess. He probably built his own A-Wing, but improved on it in every way, leading the way for an elite squadron. Problem is, he's a baddie, so he's trying to conquer. Use the Rebel Alliance to make his own path to rule. Definitely an interesting angle, but wouldn't last for more than a miniseries.
