Though if you're willing to play around with it a bit more, I'll also add in that while I called it an Action game with RPG elements you uh... don't want to treat it like say, Tales of. Getting hit hurts so you often can't just run up and attack something and just tank the counterattacks. The dodge button is your friend and it's usually a good idea to keep distance, bait the enemy into starting its attack animation by creeping into its melee range, and then dodging by either manually sidestepping/backing up with the stick, or using the dodge button (Circle IIRC). Which, speaking of, operates differently depending on what you're doing. If you're stationary it executes a backstep, if you press it with a direction you'll roll, but frustratingly if you're dashing and press it you instead try to leap which will get you hit 9 times out of 10 so be wary of that.

Lock-on is R3 (press the right stick) it's toggle and can help keep you focused/aim your attacks right. Though at times it's easier to not lock on depending on what you're doing.

tl;dr: A usually safe strat on most non-boss enemies is to get its attention, stay out of its range until ready, then get close/let them get close just enough to start an attack animation, then either backup/dodge to make them whiff and wail on them while they recover. To be extra safe try to get to their side/behind first.
