My memory is foggy, but the best one is the Count of Dublin, since he's the eldest son of the elderly Count of Leinster? just south of him, so you'll wind up with an additional county in short order. Ireland is very fractured in 1066(and Scotland and England won't bother you for a while, probably a long while), so even with just two counties, you'll be one of the bigger fish and can work on getting a handle on things.
