New varieties of apples are created by making hybrids of existing varieties of apples. There is no such thing as "overhybridizing" them.

If they are replacing red delicious apples it shouldn't matter for recipes. Since specifically calling for a red delicious apple would be a pretty good indication that a recipe shouldn't be used.


I'm not sure if this is a dig on assumed recipe quality or red delicious apples but there's going to be times when you're going to need red delicious apples. They're not overly juicy and are not sweet but not full on Granny Smith sour either which makes them ideal for cider or tart pastries.
