And suddenly the Endgame fight never happens because Stark is rotting on some planet.

You forget that Thanos was always gonna win that fight. They didn't show up with the forces to do anything but delay.

Unless Strange portal chopped his head off but that's a whole different bag of worms.

He could have opened the portal into the reaches of a black hole or some shit you don't know. But anyway the question wasn't if it would win the fight, just that his hand could get cut off it got caught in the portal.
