The Japanese-American pro made her name when she beat Serena Williams at the US Open which was much criticized and made headlines after the calls against Serena of which she blasted the judge in that match for his sexist bias against female tennis players compared to male ones.

This doesn't make sense.

She kept getting challenged and was breaking down essentially during that match. I think she got a warning for something (on-court coaching?), and then smashed a racquet which she got a point violation for. She then argued with the official, saying a bunch of things.

I meant, how was a ref being sexist in a female vs. female match?

Oh, sorry. I think it was because that she claimed that the official was being harsher on her than they would be on the males. The official in question is known for being fairly strict.

Even if her delusion was true, it wouldn't put her at a disadvantage against her opponent, since both players would be on equal ground. Seemed like a nonsensical thing for her to complain about, because as you stated, not all refs are the same (in any sport), so you'd expect some variance in matches.
