He's Martin's self-insert character. If every single human in the entire Seven Kingdoms dies and only two humans survive, there is a 100% chance that those survivors will be Sam and Arya (because Martin's wife loves her as a character and has supposedly threatened him and told him he better not kill her). Sam is the only person in the entire series who will literally never die.

(It's also been assumed/implied that the entire story as you read it in the books is the story as told/written by Sam after everything is over - again, making him the Martin analogue - so he basically has to survive so that he can write it.)

It's possible he can die in the show because the show writers don't necessarily give a shit about which characters Martin wants to protect (they've already killed people in the show who are still alive in the books), but they're also WAY more wary of pulling the trigger on important characters so you can probably give up on hoping to see Sam die.

There's at least a 70% chance the series ends with a bit of a flash-forward epilogue sort of thing where you see an older Jon sitting on the throne with Sam as the Grand Maester standing by his side (with bonus points if you also see Tyrion on his other side as the Hand).
