Because you need the heat to force the food to release the water vapor and create air pockets in the breading and then you need that oil to flash cook that breading and freeze it into that shape with all those air bubbles. It also cooks fast and locks in the moisture so your chicken stays moist. All my air fryer does is suck the moisture out of the food.
