To be fair, that's not really his gimmick. It's just the memetic joke that his character has become in Internet fandom.

As much as "smartest guy in the room, will likely outsmart you if given enough time to think/plan/prepare for a fight" is part of his characterization, there are plenty of characters he would never be able to beat even if given hundreds of years worth of prep time, unless you count "go recruit a team of way more powerful heroes to fight for me" as prep.

I voted Thanos but i still want to mention Squirrel girl has beaten Thanos.

The problem there is that those "Squirrel Girl beats insanely overpowered cosmic threat" stories were presented more like jokes, and sort of set up her own dumb meme where she's essentially able to beat gods but would still lose to the average mook on the street. She's not unbeatable, as much as her ability to succeed seems to be inversely proportional to the power-level of the threat she's fighting (which is almost never addressed when she shows up in actual more grounded stories).

Also, most of those scenes were of at least questionable canonicity (even the writers at Marvel argue over whether or not Squirrel Girl is a stupid joke), which means one could easily argue it never really happened anyway, any more than Doctor Doom was beaten by a team called "Milk and Cookies" (from an old What The...? comic story back in the early 90s).
