Making broth or stock is only difficult you want it to be perfectly clear because you are making it for a restaurant or something because you need to not let it full boil and have to keep skimming it and such Whenever I get a rotisserie at the store to make buffalo chicken dip, I throw the remains with various veggies and spices.
