Can't comment much on Ace, but he's basically mana battery and Tri-beam Laser spam. Great if you need to imperil fire for, say Flame Veritas.

Zargabaath is pretty much the support unit you throw in when you need more than one thing in a single unit. He provides elemental resistance that while not as powerful as Marie's, are still good enough. He has a 20% damage mitigation for the party that will stack with Pod 153's physical mitigation (side note: he's a great Pod user in my experience). He can do partywide 60% buffs that also provide status immunities for paralysis, blind, confuse, and disease, three of those being very handy immunities to have. There's a 100% All Stat ST buff on a 4 turn counter, meaning you can easily apply it to a couple party members and still have room to do other things. And lastly, he provides a 100% HP heal and 50% MP heal for a single target, which works amazingly with any mana-hungry unit with high MP, or as a budget healer. And all of this is wrapped into a single unit. Bring him, and he should always have something to do.

He can't work as well as a bard like Roy, and his damage mitigation isn't as strong as Rikku's. But the sheer versatility of his kit makes him exceedingly good to slot in as a general support unit if you don't desperately need a specific one, and he's been able to get my party through more than a few of the difficult trials.
