Tough question.
The first one really doesn't age well enough, even with the DoS remake.
II is very underrated IMO, it actually has a plot (impressive for its time), and I love the growth system. It's just too easy to break.
III is a very solid NES game, and the remake made it better and worse. It just plays like a worse FF V in pretty much every way, but some of the classes are super cool. Unfortunately many of them are useless.
IV is probably the most overrated IMO. Yes, the 3D remake improves on it, but it still has very dull gameplay and a plot that I never cared about. I get the sense that a lot of Americans look on it with very nostalgic eyes.
V is great, gameplay wise. The plot is very uninteresting, but it has a lot of end-game content and is definitely a strong contender for best 2D FF.
As for my favorite, usually I keep going back and forth between VI and VII. IMO they're the two that have the least flaws (far from flawless, though!).
VIII has some pretty cool ideas, but breaks so much more easily. And the story has an idiotic twist.
IX has such a nice atmosphere and setting, but the Trance system and the slowness of it cripples it a lot.
X plays really smoothly but the setting is dumb, the plot is poorly edited, and putting everything in a corridor made it really dull. X-2 is dumb.
XII has a lot of good things, it's just that it fails to really catch my interests. XIII is like X cubed - plays smoothly and some neat ideas, but suffers even more from poor plot and corridor syndrom.
XIV is the only MMO I tried, and it's quite nice! But I really don't like that jobs are forced into the tank/dps/healer trinity. It'd be cooler if it were spec based.

FFT is great, FFTA is pulpy mediocrity, FFTA2 fixes a lot of FFTA's mistakes but still doesn't really come close to FFT.
