Well my bloodwork came back with extremely low B12 (beyond deficient and cause for immediate concern I guess) despite trying to have more meat and eggs. Have to follow up with a doctor this week. I think I can safely give the animal products up and just supplement B12 with megadosing since I can't properly absorb it in an omnivorous diet.

They didn't say anything about the tests for coeliac, and B12 absorption issues are very common with coeliac. The blood tests aren't conclusive anyway. So I may have to push to get an endoscopy. Bah.

With the doctor's blessing I'm going to be going gluten-free and vegan oh boy

I'm really sorry to hear it, Foxx. ;( No one enjoys an endoscopy (In before someone here does lol)..
And good luck with going vegan/gluten-free, there's a lot of vegans here in the Los Angeles area, and the restaurant's I've eaten at are pretty good. So it might be a fun chance to add to your cookbook heh!
