Of course you can't.
But Square basically decided what the canon outcome of FFVII is, regardless of what choices you make.
But there's a difference between "they were nicer to each other in FF7 and hooked up at the end" and "they weren't as nice to each other in FF7 and thus only really finally hooked up a bit after the game ended". You do make a genuine (minor, but genuine) change. Plus the fault for sloppy writing, if there were any, would fall on Advent Children, not FF7.
