Kill streaks were a bit too...automatic for my tastes. Although I'm not a huge fan of AC's combat in general anyway.
I know what you mean. Like I said, you basically just had to time counters sort of...vaguely well and you can kill 10 in a row. But seeing Ezio do all that awesome-looking stuff was very satisfying. I like games where even the simplest action looks and feels satisfying. God of War does the same thing - even the most basic L1 + any button attacks are great.
