But you can switch between them anytime in the character menu, and your equipment will be saved to whatever class as long as you save it before switching to something else. If you go to the tutorial giver in the Inns, and complete all the tutorials, you'll get a ring that gives you a 30% EXP bonus for levels up to 30, which will come in handy at the start.
