based on what you said, Noita might be your best bet.

it has a very deep customization/strategy aspect to it. it also simulates every particle in the dungeon so you can do unique/tricky things involving blasting walls, setting oil on fire, etc etc, on your way to discovering a bazillion secrets

Spelunky 2 is pretty much best in genre and has a lot of knowledge to learn, although your powers don't vary *quite* as much

the stuff other people have recommended are decent as well. depends on what you're looking for- roguelikes are an extremely dense genre
