Hades is incredible but it's definitely a weird one in that you have a ton of control over how your runs go so there's very little randomness and forced divergence from your favorite strategy, all of which is otherwise a genre staple. There's still interesting decision-making to be had, especially before you get the skills (both in and out of game) to achieve that consistency, but it's a pretty big asterisk given what you're asking for here.
