oh i roast jalapenos all the time. and anaheims. they are soooooo freaking good. get the skin completely charred, slough all of it off, cut it open into a slab and deseed and devein it, and i either dice it up and put it in stuff that way, or sometimes i'll just leave it in a whole slab and use it that way too. i like taking a whole slab of roasted anaheim and using it on a turkey and bacon melt with tomato and american cheese and cheddar cheese. oh man, it's so freakin' tasty.

i thought this about soft boiled eggs too. i've tried to do the hardboiled egg thing to have around as a healthy snack, but i really don't like them that much, lol. and i always prefer my yolks runny when it comes to fried eggs. i might give soft boiled a shot now.

I can't give you the exact time, but I tend to like mine boiled in salted water for about 5-5 1/2 minutes. Be careful when deshelling them, as the whites give way pretty quickly. One thing I've learned is that there is one side on the top or bottom that has a little divot. Once you find that side, crack away the shell there and blow real hard. You should hear the shell separating from the egg, makes it easier to peel.
