The problem with channels like Joshua Weissman is that yes, you can make this stuff at home, but you need a pantry and tools the average home cook does not have. Babish and Kenji are fairly good in making easily recreatable meals, but the best is Chef John from food wishes. Also, Ethan Chlebowski is great, learned a lot of techniques from him, and Not Another Cooking Show is awesome for amazing pasta dishes, a couple of which I've made and thoroughly enjoyed. 100%.
