I'd imagine that's maybe to introduce more of the characters that don't appear until those books like the Seanchan and maybe the Aiel. I don't think they're actually going to get to the Stone of Tear and Callandor by the end of the first season. I've said this before, but I'm interested to see how the showrunners adapt such a colossal (and colossally long story). With the advantage of a completed story they'll know which pieces are important and which aren't. And also which will work better for the TV format.
