If you end up liking Brotherhood, you should definitely play Revelations, too. It has some really awesome Tomb Raider-esque locations to experience, plus it's the conclusion of Ezio's arc and I like how they tied it in to both Miles and Altair.

If you like Blag Flag you should give Rogue a chance, it has similar mechanics being the captain of a ship, you get to work on upgrading a fort instead of a pirate island, it has more story that ties in to the events of 3 (they're both prequels to 3 but Rogue gives a lot more context for what happened just prior to 3). It's not the pirate adventure that Black Flag is but I enjoyed it more, there's some beautiful autumn colors and cool winter effects when you're sailing around and the snow is accumulating on your deck.

Why do you like Valhalla more? I enjoyed Odyssey quite a bit and thinking of picking up Valhalla when it gets cheap, but most people seem to think Valhalla is worse.
I also enjoyed Valhalla way more than Odyssey.

They streamlined a lot of nonsense.

The side quests are more focused and generally occur around the area where you pick them up - no more running around clearing out copy-and-pasted bandit camps to retrieve stolen bedpans and jewelry.

The gear system is improved - you just loot junk that you can sell for money. There's no accumulating five million pieces of armor and weapons that serves no purpose other than wasting your time managing your inventory with no gain.

The historical story is not that compelling, but I didn't really find Odyssey's to be all that engaging, either, so that is kind of a moot point. I did find the writing to be a little tighter. I *did* like that they actually revisit the modern day story. Although some time has passed since the events of 3, they actually address that as something that happened and it looks like they're making a move to continue it. I enjoyed this way more than Odyssey's modern day story which was almost nonexistent and didn't really do anything except set up a single plot point that is expanded on in Valhalla.

Also there are some fun side activities, namely the dice poker game and medieval rap battles.
