I ended up taking cues from a couple of ya'll, mostly Jen. But instead of pork chops I made apple stuffed chicken with acorn squash and it came out awesome. This is the recipe I followed but I changed it a little.

No gravy (I used the leftover stuffing and cooked the chicken with it in some white wine, sort of developed into its own sauce so the gravy was unnecessary) and I added more spices. No pics unfortunately, but I do have pics of dessert:




It's a cranberry sour cream upside-down cake with a sort of vanilla sauce (pretty much caramel) and it came out awesome.

^ followed some of the tips in the comments and upped the sour cream, used some orange zest, juice, and slices. It was a big hit

Edit: if anyone tries this cake, a couple suggestions. I cooked mine waaay longer than 50 minutes. Wasn't watching the clock beyond the timer but it was probably at least another 15 minutes. Could probably use a regular cake pan. I double-wrapped my springform pan with foil and it still leaked. I had enough foresight to put a cookie sheet underneath to catch drippings. Aside from the leaking, the cake did not stick to the pan at all so I think the springform is largely unnecessary
