As I understand it, "chicken fried" refers to things that have been fried in the manner that chicken is often fried. "Chicken fried chicken" is generally redundant, because chicken is usually fried that way anyway, but for the sake of consistently likening it to other foods that have been chicken fried, it's not entirely unreasonable to say it that way (plus it's kinda fun).

Note: Chicken fried rice is not rice that has been chicken fried, it's fried rice with chicken in it.
