While true, choosing not to eat something because doing so would have significant adverse health effects isn't really the free choice you're characterizing it as. People with life-threatening allergies to foods also choose not to eat them, technically speaking.

I'm sure you could find decent gluten-free versions of both, if you wanted. Heck, even just doing cauliflower in a cheese sauce would be a similar experience, at least on the mac side of things.
