He says that the human mind only has so much space for knowledge, so anything he has no use for, he "deletes" to make room for other things, including details of his past cases. In the first book, there's a humorous exchange between Holmes and Watson when the latter learns that the former is unaware that the earth revolves around the sun instead of the other way around, and Holmes says the knowledge makes no practical difference in his life, so he sees no need to commit it to memory. --- ...
