You went straight to the most popular Esport. It's a pretty apt comparison as it sets an upper boundary for expected money return.

The "unpopular" Olympic sports are still televised and used mostly as filler between days when athletes are resting so when people aren't playing soccer they're using the stadium for field hockey or something else. They're there to make money during downtime and they still get pretty good money. You won't get Dota 2 level money for being a champion at discus, sure, but you're invited because they need someone to fill the time.

And you can literally make more money begging than bobsledding so that's not really a fair comparison either.

At the end of the day the most popular games combined just don't have enough money to put together a singular event on an international stage and the less popular games would end up losing money.
