I can't remember the music from 8 being anything other than forgettable generic garbage, and the "cash in" song was kind of lame (Kingdom Hearts did it way better). Part of that might just be because I pretty much loathed every single other facet of that game and it colored my perception of the music as well, but I honestly don't remember a single song, theme, or bit that ever really stood out to me as something worthwhile. But even Nobuo Uematsu has said he doesn't really look back on it all that fondly.

I liked the music from 7, though it always felt like people praised One Winged Angel way more than it actually deserved. The songs I remember are more some of the instrumental tracks from earlier in the game (like Mako Reactor, Shinra's theme, Nightmare Begins, Wutai, etc). Or just the really subtle stuff you barely notice in the background when wandering around.

6 always had the best for me (more in composition than final result, considering it was all MIDI), but 4 also had a couple great ones (Four Fiends being especially good). Most of them all sound incredible when you hear them with a full arrangement (either via an orchestra or in The Black Mages concerts).

I like a couple of songs from 10 as well (To Zanarkand is really nice).

When it comes to cool game music though, Final Fantasy has sort of been trumped by .hack for me. But part of that is the anime as well as the games.
