That will hurt the show I think the most elegant solution would be to have Jimmy lose the restaurant to his wife, and she takes over and turns out to be just as bad as Jimmy. Otherwise just silently retire him into a background character. You can't really write him out entirely because you lose Jimmy Jr., who is pretty big in the show. There's also the twins and Trev to a lesser extent. But yeah, I can't see the VA returning after this.
