I want to say sneak because it's so fucking OP in the game, but pragmatically speaking illusion would have the same practical benefits (via its invisibility and muffle spells) and restoration would be neat if it could dramatically improve the user's lifespan.

Speech would probably be one of the most OP skills of all, but the skill tree is mostly focused on merchant stuff. And a 30% boost to persuasion doesn't necessarily equate to much IRL, nor does doubling intimidation.

In general, most of the normal weapon skills won't be terribly useful because the weapons are obsolete. The same kinda goes for the armor, which also isn't practical much of the time. That really just leaves the magic and stealth-related skills. And then that really depends on how it ties to the real world. For example, enchanting would be OP since it lets you use abilities from multiple styles, but would you need to charge it with souls?

All things considered, I probably am leaning towards illusion since it has a wide array of useful effects and a fun element to it.
