I started GRIS like two days ago. It didn't give me a strong first impression, but then it finally added a little substance to that style. I'm currently in the forested area, which is currently my favorite place I've been so far.

I've mostly been exploring Horizon, so I have barely made progress outside of the tutorial intro. I want to play more of a stealthy approach, but man those Watchers have eagle eyes. I can be a mile away across water, trees, and rocks, and they can spot me no problem and invesigate my area or even just come after me. I honestly don't know what I'm supposed to do to avoid that, so I've basically just resigned myself that I don't need to crouch while exploring often. I was looking at the map and thinking that huh, I was expecting the world to be larger given the run-time, but then I zoomed out the map. My god this place is massive.

I do agree that menus are overwhelming at least initially and could have been streamlined some. I found out by chance that I could increase inventory size and other stuff through the menus without them bothering to tell me that.

Yes, I stumbled into the inventory size stuff as well. Those upgrades just keep going and going... But I guess those are the reason to keep killing the non-machine animals.

I like to play stealthy as well. The tall grass is your friend. Also, there's a skill (pretty sure in the first row) that allows you to whistle to attract an enemy. Needless to say, I've done a lot of stealth kills from tall grass.
