I mean, duh, there's a scale of how 'ethical' something is. She should be able to admit that and see that these chickens are at least quite a lot happier in their free-roam environment before they are killed for consumption.

At the same time, in a work situation, I'd rather say 'wow, I hadn't thought of it that way. I'll do some more research' just to gloss over the situation. I'm working. I'm not in Philosophy 101. I mean, she walked in and still ordered our one vegan option. Whatever! Can't let it take up too much brain space.
