Runny just means the yolk is hot but still liquid.

I cook them slightly higher. A flat metal spatula is what I recommend to flip the egg, if you are cooking both sides but be careful not to break the yolk.

You stop when you get the egg you want. At a higher temp, you have to keep an eye on the white of the egg from crisping. some people like crispy egg whites. I do not.
