I also recommend 4 and 6.

With 4 (The Final Chapter), you get the best of the "classic" and what most think of as the typical Friday the 13th movie. The cast is fun, Jason is menacing, and the kills are bloody thanks to the series bringing back special effects artist Tom Savini.

6 (Jason Lives) looks like a high budget Friday the 13th film and has a fast pace. You don't get the traditional "girls get naked" and "tons of gore", but it makes up for it in energy. It's fun with a crowd.

2 would be next in line as it's a stronger entry in the "classic" approach than 1 or 3. As much as I like 5, it's incredibly sleazy so probably not the best option.

About the gore in 7, it was all cut. With the special edition DVD, the missing footage has been an option but it's separate from the main film. It's good stuff as one would expect since the movie is directed by a special effects artist.

As for 2, it's missing bloody moments was long thought lost. Someone decided to ask the special effects artist about it and, as it turns out, he had a copy of the missing pieces on VHS (rather a 3/4 inch tape). However, it wasn't in the best condition and was stuck together as the tape became wet from sitting in his garage. It was transported across the country, carefully placed in an oven where it was heated up over several hours so the layers of tape would come apart, and then scanned. It actually worked! The cut moments of blood is an extra on the new box set although you can find it on youtube as well.
