Topic	Demon's Souls remake has no difficulty options and people are upset.

If its not meant to be fun then you arent missing out on anything right? Also Naughty Dog games make sense to have handicaps because the games are driven by narrative and a cinematic like experience. The Souls games are driven by hardship and overcoming those obstacles by adapting, it would quite literally go against its very nature.
