Restaurants have a notoriously low margin of profit. Let's be real here, if tipping weren't a thing servers would be making minimum wage, maybe slightly more and pizza delivery drivers probably wouldn't even be a thing.

And as I said, it's a pay structure that works in the favor of the server and the customer. If I were to just increase my menu prices to pay my wait staff an hourly wage i also have to charge you for sales tax on that increase, I'll have to pay revenue tax on it, and the server will have to pay income tax on it. You're talking about very significant amounts of money over time.
