A bunch of reasons.

For one, sometimes i just want to chill and get immersed in the world and story and characters, and not worry too much about the active gameplay elements. I know the response to this is probably something like "read a book", but games offer a level of story engagement unique to the medium. That's what I mostly like.

In terms of actual gameplay, there are a couple of elements I like about turn based games when done well.

-Strategy is rarely at Xanatos level gambits, but there is something satisfying about organizing a course of action. I actually really like Final Fantasy X for this, as each character has a defined role, and each enemy encounter is designed with those roles in mind. So it's a quick, rapid burst of "okay, there's a bat, an elemental, and an iron giant. I'll have wakka attack the bat, lulu blast the elemental, then have Auron use power break on the iron giant so i can focus all the teams attention on it next round."

-In some RPGs, it's the customization aspect that's fun. Class based systems are rarely designed to require a specific "meta", but it can feel rewarding if you plan something out. And even if you just overpower through the trash mobs by grinding, it's still "your" party that you built and customized. And depending on the game, there's satisfaction in figuring out just how badly you can break the game with combinations the developers either didn't foresee or didn't care enough about to restrict.

-long dungeons and stretches of exploration can require you to prepare and budget your resources, so that HP, MP, and your healing items become precious commodities. Pokemon Red/Blue are a good example of this, as it's easy to get stuck halfway through a cave with a barely alive party, where you need to really be picky on who you use your last Potion on. Surviving these areas and getting to the light at the end of the tunnel is really fun.
