Oh wait, you haven't played Code Veronica yet? It's more or less a main entry in the series, but there were some issues with Sony at the time which is why it isn't called Resident Evil 3 or 4 even though it should have been. That's where Wesker returns to the series and it really should be played before 5. Heck, if you were confused as to why Wesker is even in 4 after what happened to him at the end of the first game, this will help answer it.

Outbreaks just aren't fun in single player and it's debatable about what in the entries are canon. Revelations offer stories with characters that seem to get overlooked in the main entries and, from what I can tell, are enjoyable. Chronicles are short rail shooter summaries of the games. Your mileage will vary on those. Dead Aim was alright when it came out, but it's not needed as it adds little / nothing to the overall story. Survivor is just terrible.

I would go with Code Veronica next, especially if you're wanting to tackle 5. Then hit up 5, 6, 7. Still interested in the series at that point? Hit up the Revelations games.
