Pretty much any Pokemon game from Gen 3 on has held up pretty well, especially Colosseum and XD on GameCube. Those games had 3D graphics, took the game into a different territory, and while having some weird grinding it was nice to have a game that focused on 2 v 2 battles. Id rather play Leaf Green or Fire Red, or Heart Gold or Soul Silver than any of the gen 1 or gen 2 games. 1 and 2 just suffer from too many issues and without things like items, abilities and the attack/special split just dont have enough depth.

Any of the Final Fantsy games from SNES onward have held up very well, as well as final fantasy tactics. Final Fantasy 1 is just bland now, not as much replay value as some of the others. I dont care if it kicked off a lot of RPGs, it was great at the time but now is just boring. The Gameboy final fantasy games are actually pretty good too, they may be weird but I actually enjoy their quirky and heavily RNG nature (not the Zelda style one, the one where you can recruit monsters and eat meat to morph),

I feel the Disgaea series has held up as well, but more so starting with Disgaea 2. The first one was good and has a good story, but there are so many QOL improvements just in 2 that I think that game is still enjoyable to play now (though I prefer the PSP version over the PS version due to the additional story content).

Baldurs Gate 1 & 2 are also outstanding old style RPG games that are still enjoyable and can be great when you play multiplayer.

For those not into RPGs, I think the Legend of Zelda a link to the past was a great game and still is a fun play through with decent graphics and atmosphere. Many of the Mega Man games still hold up as well, they are tough but fun platformers.
