It's part of lightsabers really.

And it happens all the time in the movies.

"All the time"? Yeah, no. It really doesn't. Of all the times someone has gotten struck down by a lightsaber across all the film the number of times dismemberment occurs are left for very few key scenes.

Like, I don't care about this either but how can you not understand why some would?

And?

My point is it wasn't really even much of a thing in other Star Wars games, so why would anyone expect to see it here? Especially with a play-it-safe-fun-for-the-whole-family property like Star Wars and the fact that the details in games nowadays could potentially hit them with an M rating (which they most certainly don't want for a damn Star Wars game).
