If she just accepted the surrender and torched Cersei she maintains the status quo of support for Jon growing in the background. Also I think she finally realized that she was never going to be emotionally satisfied with that kind of outcome and just released all her pent up rage and sorrow that's been building over her entire life around King's Landing, her heritage, and recent events. I was honestly surprised that neither she (with Drogon) or Cersei (with Wildfire) didn't just explode the bells. It's the kind of move I saw both doing but neither did!
