Because they are all generic, far reaching statements. If you include Merry Christmas, you have to include the version for literally every holiday. Happy Holidays literally covers all of them.

Is Santa typically associated with other holiday traditions besides Christmas?

Correct me if I'm wrong, but the stories I was read as a child regarding Santa was directly correlated with Christmas. He said Ho Ho, Merry Christmas. I don't remember him saying Ho Ho Happy Kwanza or whatever.

Here's the issue.

His appearance? You can thank Odin for that.
Leaving things out for him? Odin again.
His reindeer? Yep, Odin.
His trademark red suit? That one was actually Coca Cola in the 50's.

My point is that he might as well serve as a symbol for the holiday season since he's just an amalgamation of multiple different religious traditions, so saying he's Christian, despite having almost zero Christian influence, is stupid.

That doesn't change the fact that they don't have specific cards for each specific holiday, and instead using the generic 'Happy Holidays' to cover all of them. Again, no 'Happy Hannukah' or 'Happy Kwanza' or 'Happy Yule' or 'Happy Saturnalia' or anything like that. Stop acting like they are singling Christmas out just because they are treating it the exact same way the treated every other god damn holiday.
