Luke had far more than "ten minutes of training" before his first lightsaber duel (hint - that was at Cloud City). And the first lightsaber duel we see Anakin have was also at the end of the second movie his character was in.

Rey had never wielded a lightsaber IN HER LIFE before she pwned Ben.

In Anakin's first movie, he wins a high speed death race and then blows up a capital ship accidentally that turns the tide in the war against the trade federation because he's literally Force Christ.

Luke is appointed leader of Rogue Squadron, the rebel's top fighter pilots, despite the fact that he has never flown before and never left Tattooine, where he blows up the Death Star by guiding a torpedo 80km through a vent into the core with the force (despite the fact that this was before he could even lift up rocks).

At least in Rey's case, she has some justifications. First, she actually was shown to have martial arts experience right off the bat with her bo staff and given that she was a survivalist on Jakku. Second, her fight against Kylo Ren was after Kylo tanked an explosive plasma bolt to the torso, and Kylo was specifically instructed not to kill her (and was aggravating his wound by punching it because he was throwing a tantrum).

I'm not saying she's a good character, but she is absolutely no worse than Luke or Anakin. Especially Anakin.
