His PTSD from the Avengers incident, his obsession with creating more and more suits as he thinks that is the only one he's of any use to anyone, especially Pepper, and how eventually he learns to become a hero without all of his fancy suits of armor (even though future MCU movies kinda ruin that). He becomes much more than the sarcastically humorous billionaire previous films built him up to be. I really love the Mandarin switcharoo too.
