The Forsaken require the Val'kyr because without the Lich King raising new undead which the Forsaken can free and bolster their population, Sylvanas's Val'kyr are the only beings that can raise new Forsaken. Pretty sure the sacrificing Val'kyr in her place when she dies is just a nice side bonus. Like I said, Sylvanas does what she has to to ensure the future and growth of the Forsaken. It's not nice, but they are a race of forcibly turned zombie people. I wonder if she would still allow the Blood Elves to survive or if she would rather they were all Forsaken elves in a perfect world.
