Stuff like art, relationships, learning for its own sake, hobbies, travel, drugs, volunteering, anything like that. When classical Athens hit an age of prosperity, the people there started churning out philosophy like nothing before or since. Things that are valuable and important, but not profitable, can finally be tended to if you don't have to work but your money is fine. That's assuming they aren't just lazing about.
