Moses wrote Genesis long after the flood and the Patriarchs were gone. He only had what his ancestors had recorded and what God gave him. During the time this would have hypothetically happened humans were already turning back to idolatry and would have came up with other explanations, which would have become lost just like their religions. I don't claim it as a fact, it's just a loose hypothesis.

Nice, so after the flood and everyone but Noah and fam were dead God split the earth in two and Noah's hispanic descendants crossed the newly formed Atlantic Ocean and started their own civilization over in Mexico...but somehow developed a completely different religion from the one they had grown up knowing. Yeah, I like it! I wish that Russel Crowe movie had ended this way instead.
