There's a lot wrong in your post but let's start going through it all. The first being that it takes around 7-8 years of feeding crops to a cow to slaughter it for enough steaks to feed like a couple dozen people for one day. If everyone went vegetarian, we'd use much less land and irrigation and not more.

The meat industry is the second biggest climate pollution contributor after coal. It's literally worse than oil.

Look at how much plastic is used in the friut and vegetable industry to package those processed salads. I have even seen indivudual friuits wrapped in plastic. Think about how much more would be used if we were all Vegetarian/Vegan.

Thousands of gallons of water again used over years for cows to drink and wash the fields out of shit far more wasteful than produce. Additionally, lots of produce can be sold without packaging, but meat can never be sold without it, so you will once again still use less plastic if everyone went vegetarian.
